Recipe of the Month - Matcha Strawberry Mousse

Try this beautiful and delicious mousse duo using yummy ripe strawberries and antioxidant-rich matcha. Enjoy with a cup of our Gyokuro.

Ingredients

Strawberry mousse

  • 1 packet gelatin
  • 1 Tbsp hot water
  • 7 oz strawberries
  • 1 Tbsp lemon juice
  • 3 Tbsp sugar 
  • 3 ozs heavy cream

 

Matcha Mousse

  • 1 packet gelatin
  • 1 Tbsp water
  • 6 oz milk
  • 5 tsp matcha
  • ¼ cup sugar 
  • 5 oz heavy cream

Directions

Step 1

To make the strawberry mousse, put strawberries, 1½ Tbsp sugar and lemon juice into the blender and blend. 

Step 2

Whip heavy cream with 1½ Tbsp sugar until it forms a soft peak. Gently fold cream into strawberry mixture.

Step 3

In a small bowl, dissolve the gelatin in the hot water and add to the strawberry mixture. 

Step 4

Mix all of these ingredients well and pour into pretty dessert glasses. Allow to set up in the refrigerator for at least two hours. 

Step 5

To make the matcha mousse, sieve matcha powder through a fine mesh strainer and mix it with sugar. To this mixture, gradually add heavy cream and mix well to make a smooth paste. Strain. 

Step 6

In a small bowl, dissolve gelatin in the water.


Bring milk to a bare simmer in a small pot. Add gelatin mixture to milk. Mix the heavy cream mixture and milk mixture together. 

Step 7

Carefully ladle on top of set-up strawberry mouse and refrigerate for at least two hours until it is firm. 

 

To serve, garnish with whipped cream and strawberries.
